My favorite legume pasta noodle! Love how they're all made in the USA and contain zero fillers. So, no dairy and no egg and no wheat. Completely vegan noodles. I used the chickpea rotini in a casserole dish today, and it came out great as expected. I used My Fitness Pal's recipe nutrition calculator to approximate the caloric/nutrition content. I find their site to be accurate, and I like how I can adjust the breakdown depending on the total number of servings I type in.
Preheat oven to 350°F (I have a convection oven, so it was actually 325°F for me)
1 box Barilla Chickpea Rotini noodles (prepare as directed, drain, and set aside)
8 ounces diced, roasted boneless/skinless chicken breast (1 large breast)
12-ounces chopped, steamed broccoli florets
1 medium onion, diced and sautéed
1 cup shredded carrots, sautéed
2 large celery stalks, peeled, diced and sautéed
5 ounces baby spinach
1/2 jar alfredo sauce of choice, or 1 cup white sauce of choice (from scratch or otherwise) - you can add more if you want a really creamy casserole
Other than roasting the chicken and sautéeing some vegetables, this recipe doesn't take up much time.
Add sautéed veg, diced chicken, cooked noodles, spinach (uncooked, because I prefer not to cook the heck out of spinach), and white sauce to a large, oven-safe casserole dish. Mix well. Cover and heat in preheated oven for 30 minutes. Cool to reasonable eating temperature, and enjoy!
